Achari Aloo
Achari Aloo has all the flavors of a traditional North Indian pickle and is a spicy potato dish. It has a tangy and spicy flavor. Pair it with crispy parathas where the saunf, kalonji, methi, and red chilli flavors are paired together very well.
It is a very simple, easy, and quick-to-make dish. Takes little time for preparation. It is a very delicious North Indian. A simple everyday Potato dish where potatoes are cut into wedges and cooked along with Ciba spices ginger, green chilies, achari masala powder, red chili powder, turmeric powder, and dry mango powder. The dish has a delicious spicy and tangy taste. Squeeze lemon juice to make it tangier. Garnish it with coriander leaves.
Serve it with paratha, roti, lachha paratha, and missi roti or any other preferred Indian bread. The dish can also be served as a side dry dish with dal and rice.
Use readymade Pickle masala in the dish or dry roast fennel, fenugreek, and mustard seeds. Grind dry spices to make a fine powder. Both ways the dish will taste good. Use Ciba spices Kashmiri chili powder for a bright red color.
- Heat mustard oil in a pan.
- When the oil is heated, add hing and cumin seeds. Let the cumin seeds pop for 5 – 7 seconds.
- Add ginger and green chilli and fry for a few seconds.
- Add potato wedges and fry for a minute.
- Add Ciba spices Achari Masala, turmeric powder, red chilli powder and salt and mix well.
- Cover the lit and cook on low heat until potatoes are done. Add water in between if the mixture starts to get dry.
- Add dry mango powder and fresh coriander and mix well.
- Serve hot with preferred Indian bread or with rice and dal.
