Gobi Tikka Masala By Sikha Bafna Gupta

Ingredients:

  • 1 big cauliflower floret carefully
  • 1 green capsicum cut in square
  • 1 medium size Onion cut in square
  • 1 tomato seedless cut in square

For gravy

  • 1 palm full cashews
  • 2 Onion chopped
  • 2 tomato chopped
  • 1 tbsp ginger chilli paste
  • 1 tbsp garlic paste
  • 1 tbsp CIBA chilli powder
  • 1 tsp CIBA turmeric powder
  • 1 tbsp CIBA coriander powder
  • Salt to taste
  • 1 tsp cumin seeds
  • 1 tsp CIBA garam masala powder

For marination

  • 1 cup hung curd
  • 2 tbsp toasted gram flour
  • 1 tbsp oil
  • 1 tsp ginger chilli paste
  • 1 tsp garlic paste
  • 1 tsp CIBA kashmiri chilli powder
  • 1 tsp CIBA turmeric powder
  • 1 tsp CIBA coriander powder
  • 1 tsp CIBA crushed kasturi methi
  • Salt to taste
  • 1 tbsp mustard oil
  • 1 tsp tandoori masala
  • For garnish
  • Fresh cream
  • Kasturi methi

Instructions:

  1. Cut cauliflower floret and blanch it in hot salt water for 2 minutes
  2. Heat oil in a pan
  3. Add carrom seeds and besan and roast it till aroma start coming
  4. Switch off the flame.
  5. In a bowl add hung curd
  6. Add all spices and mustard oil, add roasted gram flour, ginger garlic chilli paste. mix well.
  7. Add cauliflower floret. Mix well
  8. Keep the cauliflower mix in Fridge for 30 minutes to marinate
  9. In another pan, heat 1 tsp oil
  10. Add Onion, cashews and chopped tomato.
  11. Add little salt and chilli powder. Mix well.
  12. When tomato become soft, let the mixture to cool and then grind it in a smooth paste.
  13. Heat 1 tsp oil in a pan, add chopped capsicum, onion and tomato, saute it.
  14. Heat oil in grill tawa or non stick pan.
  15. Add oil, marinated gobhi and let it brown in color from both sides.
  16. Heat oil in a pan, add ginger garlic chilli paste.
  17. Saute it till all raw smell goes.Add ready tomato puree add all spices
  18. Add salt and mix well. Adjust spicesĀ  and add water
  19. Add saute capsicum onion and tomato. Mix well
  20. Add fried marinated gobhi and mix everything together.
  21. Cover it and cook it till gobhi start leaving oil. Switch off the flame.
  22. Garnish with crushed kasturi methi and fresh cream.

Serve hot Gobhi tikka masala with hot chapati or naan.
